Phew. It has been weeks since I’ve posted, and it is official: May never gets any easier. This month has seen soccer tryouts, my work conference, and loads of surprises that needed to be attended to.
Many, many nights this month, cooking wasn’t even an option. Not even a quick cocktail recipe. Zero time and zero stamina.
But I started cooking again this week, so it must mean that May is nearly over. I eased myself in with this first one, and I decided to make linguine al limone from my What’s Gaby Cooking - Take it Easy cookbook.
I made a lemon linguine before, and it was met with mixed reviews. I don’t remember if it was this exact recipe or something similar - but I went for it anyways because I felt like it.
I did cut the lemon a smidge.
This recipe called for adding lemon zest to the cream (which I did) and then add lemon juice at the end “to taste”. Since one of the kids was not a fan of the over powering lemon last time, I just cut out adding the lemon juice at the end.
This seemed to solve the problem, overall. It turns out Gus was the lemon fan and Lucille not so much. They both ate this. Gus also took leftovers for lunch the next day and Lucille passed on that. So maybe still not a huge fan, but she ate it and appreciated the cutback on the lemon.
Best thing about this recipe is it was easy and in my opinion - a great spring dish.
Well. Maybe I am getting back in it. June will be better and life will slow back down for a few months with summer break - before it takes off like a race horse in September.
