January 2: Vanilla Cream Scones
Good evening, foodie friends!
I’m on day two of my goal to cook through my cookbooks in 2025, and after yesterday’s overzealous start, I realized I didn’t have a set recipe planned for today. Between not planning ahead and returning to work after a week off, today called for something quick and easy.
With all that in mind, I knew it had to be a bake. Baking is the easiest part of cooking for me, and my search brought me to the Otherworldly Vanilla Cream Scone recipe from my new cookbook, Snackable Bakes (a Christmas gift!)
Everything about this cookbook is genius. The idea that baked goods can be seen as snacks rather than just desserts is 100% my mindset. I love baking and hate thinking about it as “just making desserts” all the time.
Scones are really breakfast in my mind, but I had all the ingredients and think of Scones as being a pretty easy bake, too. So mid-afternoon scones it was and they were a great snack and bonus! I’ll be ready for breakfast tomorrow.
The only note I have on the recipe - is actually a slight recipe confession. I don’t always read the paragraph above the recipe in a cookbook and I wish I had this time. The author, Jessie Sheehan, specifically says if you want slightly taller scones, chill them in the freezer before baking. A tip I will definitely use next time I make these.
Since tomorrow I don’t want to be scrambling for a recipe like I was today, I think maybe planning out the recipes for the rest of the week would be a good idea. I have a few dinners planned that are from cookbooks but a few that aren’t so I’ll need to find a “non-dinner” recipes for those days. I don’t want to skip a day this early in the challenge.
Maybe a drink tomorrow, or an easy lunch. We’ll see!
