No ketchup was involved in the making of these tacos.
When I say catch up, I mean actually trying to catch up. My 2025 has officially gone of the rails, but here we are post-tax day and maybe that sunshine out the window will be here for a while. Maybe a break is on the horizon.
The big deal is that today, I made a recipe from one of my cookbooks AND I am actually writing about it. It’s a win and I will take it.
Today we made pork chuleta tacos from my cookbook Tacos: 75 Authentic and Inspired Recipes.
The book calls this a simple country-style recipe and I get that. It was easy and quick, which was just what we needed today since we had nothing planned. The pork is just pork loin and we used thick pork loin chops.
The seasoning was simple - ground coriander, canela (we used cinnamon), salt, and pepper. They tasted fine. We added salsa and cheese to ours and it was a quick and easy lunch. I would love to try making my own salsa out of this cookbook one of these days. I imagine that would make this so much better.
Also, quality tortillas would have made these perfect. I used to buy tortillas from the farmers’ market on a regular basis when we had more time to go — and I think I’d like to aim to do that once a month again. Get some high-quality produce too. We have one of the largest farmers’ markets in the state, and my kids don’t even remember ever going to it. So I’ll add that to my goal list.
I don’t have plans for the rest of the week and I don’t have high hopes for posting every day this month. I’d love to get ahead of things and have a plan, but for right now the plan is to fly by the seat of my pants. And I am doing that REALLY, REALLY well.
